_____________________________________________________________________________________________________________________________Tasting Notes2007 Eden Valley Riesling This wine is made using only the free-run juice and cool-fermented in stainless steel vats until almost dry. The nose exhibits fragrant citrus blossom aromas with lemon, lime and floral flavours on the palate which are typical of Riesling from Eden Valley. It is light and crisp with a lingering finish which would be suitable to drink now but will cellar well under the screw-cap seal. The wine is a delicious accompaniment to seafood, lightly spiced food or Mediterranean cuisine. 2004 Cabernet Sauvignon The fruit for this single vineyard Cabernet Sauvignon was harvested in early April when the flavour profile of the fruit was at its peak. The nose exhibits aromas of cloves, chocolate, mulberries and aniseed with some mint. The palate is fresh and dominated by sweet fruit which seamlessly integrates with the natural grape tannins. We matured the wine in predominantly French oak for 18 months to enhance these plush, velvety grape tannins which linger on the after palate. 2004
Shiraz Sparkling Shiraz A great example of a true Australian style, we made this decadent sparkling wine with fruit from our Shiraz vineyard in the Southern Flinders Ranges region of South Australia. We matured the wine in older American oak barrels then selected this batch of Shiraz as the perfect wine for some sparkles. Bundaleer's first sparkling wine, it's a unique indulgence for even the smallest of celebrations. Deep red in colour, the wine is elegant with rich varietal Shiraz character. From your first sip you'll experience an explosion of soft black fruit flavours with a hint of sweetness. The gentle tannins and oak combine perfectly with fine bubbles for a long finish that will leave you wanting more. κκκκ 2004 CABERNET SAUVIGNON From the Bundaleer Forest area comes this varietal with floral violet and mint notes with the blackberry fruit, as well as a lovely creaminess in the aroma/palate seam.
